Carrot Cake

2 cups flour
2 cups sugar
2 tsp cinnamon
4 eggs
1 1/2 tsp soda
1/4 tsp salt
1 1/2 cups Wesson oil
2 jars strained baby food carrots size no. 2
Beat sugar and oil. Add eggs 1 at a time and beat after each egg. Combine flour, cinnamon, salt, and soda.
Then sift .
Add to mixture. Add carrots. Bake in 3 round pans or large oblong pan at 350 degrees for 25 to 30 minutes.
Frosting
1 8 oz package cream cheese
1 stick margarine
1 box confectioners sugar 10oz
1 tsp vanilla
1 cup chopped nuts
Combine cream cheese and butter. Add sugar and vanilla. Beat mixture. Add nuts and mix well.
